I have a dedicated WebDAV server that uses port 8080 already.
Is there a way to change music studio's default server to use another port?

Sorry, no, Music Studio only works with port 8080.

However, there are other ways of file sharing than the WiFi server: iTunes File Sharing, iCloud Drive, Dropbox and other cloud drives, see http://www.xewton.com/musicstudio/doc/?id=9#iCloud_Drive
